Good morning friends! Today I woke up craving a waffle from Taste of Belgium, but really wanted something just as tasty but a little healthier, and I didn’t feel like fighting the Saturday morning restaurant crowds. Only one thing to do..make Raspberry Crepes!
Just dump the flour, salt, milk, eggs, and melted butter into a bowl and whisk it all together. Then pour the batter into a small, medium hot skillet and swirl it around to form a thin crepe.

Once the crepe is done the edges will start pulling away from the pan. Then just turn the pan upside down and bang the edge on a cutting board. The crepe should just flop out. Stack them as the cool to keep them from drying out while you make the others.

I keep frozen fruit in the freezer and I use Whole Oat Flour which I keep in the fridge. So I can always keep the fixing for crepes at the ready.
